Good Eats | Back To School: 5 Nom Nom ‘End Of Summer’ Recipes To Try

That part of the year, when it’s about to get way “too busy” to whip up a big feast, we wonder about all the easy dishes that are just as filling, and just as delicious! It’s BACK TO SCHOOL time and for some, the last week of summer break! As you prepare for long days of shopping for school supplies and clothes, make sure you keep these tasty dishes in your corner! And of course, they are fresh, and yummy nom nom for the kids!

Chicken & Summer Vegetable Tostadas

INGREDIENTS:

  • 2 teaspoons canola oil
  • 1 teaspoon ground cumin
  • 1/4 teaspoon kosher salt
  • 1/4 teaspoon black pepper $
  • 12 ounces chicken breast tenders
  • 1 cup chopped red onion (about 1)
  • 1 cup fresh corn kernels (about 2 ears) $
  • 1 cup chopped zucchini
  • 1/2 cup salsa verde
  • 3 tablespoons chopped fresh cilantro, divided
  • 4 (8-inch) fat-free flour tortillas $
  • Cooking spray
  • 3 ounces Monterey Jack cheese, shredded (about 3/4 cup)

DIRECTIONS:

Preheat broiler. | Combine first 3 ingredients, stirring well. | Heat oil in a large nonstick skillet over medium-high heat. | Sprinkle the spice mixture evenly over chicken. | Add chicken to pan; sauté for 3 minutes. | Add onion, corn, and zucchini to pan; sauté for 2 minutes or until chicken is done. | Stir in salsa and 2 tablespoons cilantro. | Cook 2 minutes or until liquid almost evaporates, stirring frequently.Working with 2 tortillas at a time, arrange tortillas in a single layer on a baking sheet; lightly coat tortillas with cooking spray. | Broil 3 minutes or until lightly browned. | Spoon about 3/4 cup chicken mixture in the center of each tortilla; sprinkle each serving with 1/4 cup cheese. | Broil an additional 2 minutes or until cheese melts. Repeat procedure with remaining tortillas, chicken mixture, and cheese. Sprinkle each serving with about 3/4 teaspoon of remaining cilantro. Serve immediately.

Salmon Burgers

INGREDIENTS:

  • 1 cup finely chopped red onion
  • 1/4 cup thinly sliced fresh basil
  • 1/4 teaspoon salt
  • 1/4 teaspoon freshly ground black pepper
  • 1 (1-pound) salmon fillet, skinned and chopped
  • 1 tablespoon hot pepper sauce
  • 1 large egg white
  • Cooking spray
  • 8 (3/4-ounce) slices focaccia, toasted

DIRECTIONS:

Combine first 5 ingredients in a large bowl. | Combine hot pepper sauce and egg white in a small bowl; add egg white mixture to salmon mixture, stirring well to combine. | Divide the mixture into 4 equal portions, shaping each into a 1/2-inch-thick patty. | Heat a large nonstick skillet over medium-high heat. | Coat pan with cooking spray. | Add salmon patties, and cook 3 minutes on each side or until desired degree of doneness. | Serve patties on toasted bun or focaccia.

Hot Dogs “Run Through the Garden” Chicago Style

INGREDIENTS:

  • 7 hot dog buns
  • 2 quarts water
  • 7 97% fat-free beef franks (such as Hebrew National)
  • 1 cup finely diced white onion
  • 1 cup diced tomato
  • 1/2 cup sweet pickle relish
  • 1/3 cup prepared mustard
  • 14 sport peppers

DIRECTIONS:

Preheat oven to 350°.Wrap buns in foil; bake at 350° for 10 minutes or until thoroughly heated. | Remove from oven, and keep warm.Bring 2 quarts water to a simmer in a large saucepan. | Add franks; simmer 5 minutes or until thoroughly heated. Drain well. | Place 1 frank in each heated bun. | Top each frank with about 2 tablespoons onion, about 2 tablespoons tomato, about 1 tablespoon relish, and about 2 teaspoons mustard. Serve with peppers. **(PSLOVECHARLI TIP: Serve with sweet potato fries!)

Summer Zucchini Squash Pizza

INGREDIENTS:

  • 1 teaspoon olive oil
  • 1 teaspoon balsamic vinegar
  • 1/8 teaspoon salt
  • 1/8 teaspoon freshly ground black pepper
  • 1 medium zucchini, cut lengthwise into (1/4-inch-thick) slices
  • 1 medium yellow squash, cut lengthwise into (1/4-inch-thick) slices
  • Cooking spray
  • 1 (12-inch) packaged pizza crust (such as Mama Mary’s)
  • 2 plum tomatoes, cut into (1/8-inch-thick) slices
  • 1/4 cup (1 ounce) finely grated pecorino Romano cheese
  • 2 tablespoons thinly sliced fresh basil
  • 1/2 teaspoon finely chopped fresh oregano

DIRECTIONS:

Prepare grill. | Combine oil, vinegar, salt, pepper, zucchini slices, and yellow squash slices in a large bowl, tossing gently to coat. | Place squash mixture on grill rack coated with cooking spray; grill 2 minutes on each side or until tender.Reduce grill temperature to medium. | Lightly coat pizza crust with cooking spray; grill 1 minute on each side or until lightly toasted. Arrange zucchini and squash over crust. | Arrange tomatoes over squash; sprinkle with pecorino Romano cheese. | Grill 5 minutes or until thoroughly heated. Remove from grill; sprinkle with basil and oregano. **(PSLOVECHARLI TIP: ADD SPINACH, TOP WITH FETA CHEESE IF YOU LIKE!)

Turkey Burgers

INGREDIENTS:

  • 1/4 cup chopped green onions
  • 2 tablespoons fresh orange juice
  • 1 tablespoon low-sodium soy sauce
  • 1 teaspoon finely chopped peeled fresh ginger
  • 1 garlic clove, minced
  • 1 pound ground turkey breast
  • Cooking spray
  • 4 (1 1/2-ounce) whole wheat hamburger buns
  • 4 curly leaf lettuce leaves

DIRECTIONS:

Prepare grill.  | Combine first 6 ingredients in a large bowl. | Divide turkey mixture into 4 equal portions, shaping each into a 3/4-inch-thick patty. | Place patties on grill rack coated with cooking spray; grill 6 minutes on each side or until done.  | Place lettuce leaves on bottom halves of buns; top each with 1 patty and top half of bun. Cut each burger in half.  **(PSLOVECHARLI TIP: add avocado, tomato, pepper jack cheese, and grilled mushrooms for additional flavor!)
