Good Eats | Smoked [or] Grilled Salmon Crostinis + Breadbox Idea


It’s after Christmas and the perfect time to prepare appetizers or hors d’oeuvres for your New Years Eve or New Years holiday party! Salmon is always a delicious treat to eat, but to enjoy it without it being the main course, is just icing on the cake! I ran across this recipe after sampling it at a DC birthday event — so finding the recipe was a major must. Today we’re sharing…

Salmon Crostinis

[These are tasty both grilled or smoked — whichever you and your party prefers.]



  • 1/2 cup chopped fennel bulb
  • 1/4 cup chopped green onions
  • 1 tablespoon extra-virgin olive oil $
  • 2 teaspoons chopped fresh dill
  • 1 teaspoon grated lemon rind $
  • 1 1/2 tablespoons fresh lemon juice $
  • 1 teaspoon freshly ground black pepper
  • 3/4 pound cold-smoked salmon, cut into thin strips
  • 48 (1/2-inch-thick) slices gluten-free French bread baguette (about 1 1/2 pounds), toasted
  • 1/2 cup light garlic-and-herbs spreadable cheese
  • Dill sprigs (optional)

DIRECTIONS (smoked):

Combine first 8 ingredients; cover and chill at least 1 hour. Spread each toast slice with 1/2 teaspoon cheese; top each with 1 tablespoon salmon mixture. Garnish with dill sprigs, if desired.



INGREDIENTS (grilled):

  • 2 Tbsp. olive oil
  • 1 1/2 Tbsp. scallion white
  • 1 lb. (cooked) salmon
  • 2 Tbsp. basil, cilantro, or parsley
  • 1 Tbsp. capers
  • 2 Tbsp. of chives
  • 12 slices French bread (toasted)
  • 1 lemon
  • 1 Tbsp. Mrs. Dash® Original Blend

DIRECTIONS (grilled):

In a medium bowl, combine the cooked salmon with scallions, lemon juice, capers, herbs, olive oil and the Mrs. Dash® Original Blend. Stir thoroughly. Lay out the toasted bread slices and pile two Tbsp.s of the salmon mixture on each. Garnish with chives.
